0.5 Melon
2 Baby courgette
1 Red Chili
Handful Basil
1 Lemon
2 Burrata
8 tbs Olive oil (Arbequina)
1 tbs Smoked paprika
Preheat a BBQ, slice the courgette in half and season well with salt & pepper. Grill the courgettes and chili on a high heat. Meanwhile cut the melon in bitesize pieces and roughly slice the basil. Allow the courgette to cool slightly, then cut into bitesize pieces. Finely chop the red chili.
In a bowl combine the melon, basil, courgette, chili and season with olive oil and lemon juice. Now tear open the burrata and spread on a plate, season with olive oil and salt and dress the melon, courgette mixture on top. Finishing by dusting smoked paprika over the salad.
