One should always be slightly hesitant when a restaurant is priced at a Michelin level, but doesn't have the star(s) to show for... ok. 70 EUR for 6 courses might be on the cheap side for a Michelin establishment, but let's be honest. Spending 70-90 EUR on a menu, you want to be certain of amazement, rather than disappointment. Right? 

Well, Guillaume de Beer might not be actively cooking for a star (or is he?), but it would be no big surprise if he would get one! His dishes are hard to describe. They appear intentionally simple but are deep and complex at the same time.

Fermentation, smoke, oils, umami, Guillaume plays around, borrowing ingredients from all over the world to create unique compositions.. Some flavours are unrecognisable but utterly delicious, some dishes on the other hand bring you straight back to happy memories (think tosti, or crepes with apple, vanilla and salted caramel).

Highly highly recommended!
