Chef Hans van Wolde is on a mission to get 2 clear messages across. First, Limburg (southern province in the Netherlands) has an absolute abundance of unbelievable produce that he believes is greatly overlooked. And second, the future of gastronomy is in the hands of the talent of today.. and they are to be invested in.
This strong conviction, or purpose if you will, within Hans makes Brut172 a very special place. Not just any ordinary restaurant. You initially come here to enjoy an extraordinary meal (and you will!), but you leave inspired, educated, and optimistically excited for what the world of tomorrow could look like!
If that weren't enough you can clearly see and taste Hans' wonderful personality in the menu. He is a little bit old school, nostalgic perhaps (cheese & onion quiche). He is open, welcoming and unpretentious (homemade ketchup..). But at the same time has a weakness for comfort & luxury (tuna, kingcrab & caviar).
Dinner at Brut172 is just a really special experience. You need to come here at least once. If you can get a reservation....
